When we have a late kick-off we get breakfast and lunch in the hotel before we depart. This is what a pregame lunch buffet looks like in '21. Alway fiddling with it a bit, but you get the idea.

This is part of the Smoothie table where we build hydration specific drinks to hyper-hydrate leading into the competition. This and the smoothie table are always by the main entrance to the dining room to allow us a touch point as the athletes come and go from the room.

Our first meal at a hotel on a game weekend is typically the Friday dinner when we arrive. It's a tough one getting the first meals set right and why I fly in ahead of the team to make sure we are all on the same page.

The Friday dinner action station is pasta focused and very popular. It's a race get ahead of the line here with our athletes. Others will hit the buffet first and come over when the line is down. Not everyone makes time to do that with all the food we have in the buffet.

We often get very oversized condiment portions on this table, like giant bowls of creamy horseradish or BBQ sauce. Lots of variety in smaller units will save you some space along with some vertical merchandising like you see here.

Great man? * 25 years of mostly, woulda, coulda, shoulda. * chose his replacement, who was forced out, after 42-7, then 16-12 * chose Pelini, who amounted to nothing when it mattered. * was part of the reason Frost was chosen. * and then there was the Phllips debacle. The man is a black cloud over the university if you consider his influence and the mostly lack of success when it mattered.

No, it was health related. I believe he was dealing with A-Fib.
